`OpenApiDocument` should be `OpenApiDescription` #2

There was a conversation in the OpenAPI Slack regarding the naming of things: "OpenAPI Document" vs "OpenAPI Description" vs maybe something else.

Ultimately, it landed on "description" as the word that is desired (as rendered in a glossary PR), so that needs to be reflected here as well.
